Mom’s Mild Chili

I never really make chili the same way twice, but jotted this down for future reference as this is the basic recipe as my son likes chili on the mild side and doesn’t like the texture of onion.   

To cut down the heat I roast the jalepeno in butter first and used dried onion flakes instead fresh ones or mince onions very fine so it does have some onion flavor. On this batch he liked the flavor but thought it would be better with more ground beef. Recipe: Brown in skillet for about two minutes:

  • 1 tsp butter
  • 1 diced Jalepeno Pepper (seeds removed)
  • 1 diced small mild red pepper (seeds removed)


  • 1lb lean ground beef
  • 1 TBSP minced garlic
  • 1 TBSP minced onion (dried)
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/4 tsp pepper
  • 1/2 tsp Garlic Salt
  • 3 TBSP Bacon
  • 1/4 tsp Cinnamon
  • 1 tsp Taster’s Choice instant coffee (or other instant coffee)

Cook over medium low heat until beef in browned, about 5 minutes.   If there is a lot of grease may need to drain, but as I used lean ground beef it was not necessary. In dutch oven  or large soup kettle add (or might be able to use a crock pot)

  • 2 cans diced Tomatoes
  • 1 can Tomato Sauce
  • 1 64 oz can of Tomato Juice
  • 1 can Kidney Beans
  • 1 can Chili Beans

Put in pot and add ground beef mixture and heat over low to medium heat for 1 1/2 to 2 hours. Serve in a large bowl.   Optional, but pictured above

  • Handful of Cheez-its crackers
  • Sour Cream (Approx 2-3 TBSP per bowl)
  • Shredded a Cheese (Approx 2-3 TBSP)
